This summer, embark and discover the spirit of Mexico through corn, with a spotlight on Oaxaca. Our Destination Oaxaca by Chef Richard Sandoval project is more than just a menu collection; it's a study on tradition, craftsmanship, and the profound connection between food and culture.
WHY OAXACA? Chef Richard Sandoval's' recent exploration of the city and its markets, people, and food sparked an even deeper appreciation for the region’s culinary heritage. This research continued from the streets of Oaxaca into our RSH test kitchens, where Chef Sandoval developed a capsule collection of traditional menu items, infusing his own unique perspective, while honoring the essence of Oaxacan cuisine. The result is a delicate balance of tradition and innovation, a homage to the artisans and farmers who have preserved these time-honored recipes for generations. A pork tenderloin pata negra with a rich Oaxacan mole negro is a star of the collection, with a truffle huitlacoche foam and a grilled peach chutney.
THE BIRTHPLACE OF CORN
Oaxaca is largely known as the birthplace of corn, and corn is the ingredient-through line in our food and drink menu collection. We honor this sacred ingredient in all its forms, from the humble tortilla to the intricate process of nixtamalization. It's a testament to the resilience and ingenuity of the Oaxacan people, who have mastered the art of transforming simple ingredients into culinary treasures.
