Guacamole de Granada

Ingredients:

  • 2 Hass avocados

  • 1/4 c. pomegranate seeds

  • 2 tbsp. 1/4-inch diced white Spanish onion

  • 2 fresh serrano chiles

  • 2 tbsp. thin strips of fresh cilantro

  • tsp. salt

  • 1 tsp. freshly squeezed lemon juice, or to taste

  • Garnishes: chicharrones, crumbled cotija cheese

  • Tortilla Chips

Directions:

Halve the avocados and remove the pits. Scoop the meat into a bowl.

Add half the pomegranate seeds, onions, chiles, cilantro, salt, and lemon juice and mix well. Taste and adjust the seasoning with salt and lemon juice, and more chiles, if desired. Top with crumbled cotija cheese, chicharrones (if desired) and remaining pomegranate seeds.Serve with tortilla chips.
